Roast Pork Sandwhich

3 lb boneless pork roast
spice rub(see below)
1 carrot-chunked
1 med onion -chunked
1-2 celery stalks -chunked
french bread
provolone cheese
dill pickles
mustard


rub-measurments are approx.(i eyeball and go by smell)

teaspoon black pepper
" garlic powder
" onion powder
1/2 teaspoon cumin
" sage
" thyme
" oregeno
1- 1/2 teaspoon salt and sugar


mix rub apply to roast,place roast in pan(fat side up) add veggies and about 1/2 cup of water.place in preheated 325 degree oven.Roast until internal temp of 165(about 2-2 1/2 hours) remove roast from pan (turn oven to broil)and allow to rest 15 mins.Strain drippins and put back in pan.remove excess fat from meat and THINLY slice and return to drippings and mix well.
Split bread and place both halfs on cookie sheet(you can do smaller chunks of bread if you like)Load bottom half with meat,top half with cheese.Broil 2-3 mins untill cheese melts.add pickles and mustard,ENJOY
