I have some elk and need a good simple recipe for making elk jerky in the oven since I no longer have a dehydrater.

I just follow what ever beef recipe that I am in the mood for,and set the electric oven on warm for about 24 hours + or - depending on thickness of cut.

Tessa, What flavor beef jerky do you like? I like the teriaki so I just soak a batch in the fridge overnight in it and I add som blk. pepper and garlic salt. When you do it in the oven put a fork or something in the door to let the moisture escape and put the oven on the lowest setting, start checking it after about 4 hours and pull it out while it is alittle soft as when it cools it will be harder. Put a drip pan in the bottom and take toothpicks and hang the strips, you can do alot more this way and it gets done alot quicker. Mike
