whats the best way to cook lion?

I have heard people eat lion, I have never but was wondering what you thinks the best way to cook it. I was thinking bbq, I have had bear bbq and thought it was good. :?:

Cut the loins into one inch squares and marinate them overnight
then slow cook them in a crock pot after adding more BBQ sauce.
Great conversation piece for parties

Shish Ka bob lion on the grill:

shish ka bob sticks
lion meat
onion
red pepper
grn pepper
mushrooms
olive oil
teriyaki sauce

Cube lion meat into 1 inch pieces, same with the onion, peppers and mushrooms. Place them in bowl or ziplock. Use enough olive oil to cover, add 1 tbl spoon of teriyaki sauce to olive oil berfore putting into bowl or ziplock.

Marinate for 30 minutes or more.
String meat and vegetables alternating onto k bob sticks and cook over medium fire on grill till done - medium. Do not over cook or dry out.

I like doing a roast in the crock pot with green chili it is great. Or even loin steaks.

Marinade in milk for a few hours, slice and fry in olive oil.

Soaked this lion tenderloin in a brine (1/2 cup salt in a liter of water) for a few hours. Then put a dry rub of paprika, minced onion, chili powder, cumin, white pepper, black pepper, salt, brown sugar, and cayenne. Grilled it on medium low till it was about 145F on a meat thermometer.

Bacon wrapped tenderloin fried with the left over bacon and add your favorite seasons also take the hind quarters deboned separate the muscles for roasts I like putting them in the smoker for about 4 hour with a dry rub some of the best eating you will have hope you get one so you can enjoy

just fry it in bacon grease add what seasoning you desire . its good real good. fajitas good to.

I have done lion many ways and it is pretty hard to mess up. No wonder it was the favorite fare of the mountain men.

For many parties and lion hunter rendevous I have done it in a light seasoned batter and chicken fried or deep fried it much like chicken tenders.

I have done the for the country club set and the ladies will fight over it if you put out some nice dipping sauces. LOL!
I did one where we had deer, elk, moose, antelope, caribou, wild sheep, pheasant, quail,duck, and goose and bear. The top hits were lion,bear, and sheep in that order followed by the game birds last on the list was the goose other than the mystery meat I slipped in. Ha! Ha! I thought that meat off that old tom bobcat looked pretty good although I didn't try it but a few of them said they thought they had a hair ball in their throat. LOL!

Back many years ago an old bear hunter friend drove a wholesale meat delivery truck. I drove a beer truck, Our paths frequently crossed. He talked me into sending the back hams off a lion with him to Carlton meat packing here in Oregon to have them smoke cured.....Looked just like a glazed ham with the outer plastic net to hang in the smoker. Very tender, the moist was sealed in with the process and out of this world delicious!
