I am not a vet or animal expert, but I will tell you what I do. I have a self feeder that I keep a good quality dog food in for my hound to eat from whenever he wants and I also feed a raw chicken leg quarter every evening. Here is a picture of him at 10 months. He is the bigger one in the rear.

I would feed it as much as you can get it. We feed meat scraps as much as we can. We try to get it as fresh as possible. Just pay attention to the dogs weight as fat and trimmings will put the weight on a unused animal. More than likely the quantity you feed will be less than just feeding a manufactured dog food. You might check out any info on sled dogs, this will give you some insight on what high performance dogs really require for maximum output. We feed it straight or mixed with Kirkland chicken and rice and have had great results.

From my perspective, if a meat shop is giving meat to feed, I would not be feeding any processed dog feed. The only thing dog feed has on the real thing is convenience and a high price tag to go with it.

You want a precise answer to a question that cannot have one. The answer it to apply common sense and trial and error together and all will be fine. Common sense means don't do to your dogs what I will do do to myself this upcoming Thanksgiving dinner, especially if you plan on hunting them immediately afterwards.
When we, or someone else cleans out the freezer, I feed everything to the dogs. Of course I meter it out as I see fit and everything works out. No rocket science to it (although fat is like rocket fuel), dogs will eat and thrive on most anything and too much of it if you let them.
Now when I am not around and my wife cleans out the freezer, no common sense is applied and it all goes to them at once and everyone is miserable for a short spell. But all seem to survive just fine.
